Test the finished product, not a theory about the ingredient

A protein number, a specification sheet, or a familiar brand name can inform a decision; none replaces a finished-product comparison. ASB describes baking quality as a combination of dough behaviour, water absorption, gas retention, finished volume, texture, crumb, and sensory evaluation. Translate that into the product you sell: dough handling, make-up, proof response, baked structure, package performance, and the customer-facing result.

Hold the known reference route steady while you learn. Use the same approved formula, operator, equipment, piece size, pan, oven route, and assessment point where practical. If flour behaviour changes, do not also change mix time, water, proof, and oven settings in one trial. A single-variable comparison gives the owner-chef a decision the next shift can repeat.
